Caesar Salad Roll Ups

Giant romaine lettuce heads! They pretty much scream out Caesar Salad.

Caesar Salad appeared on the scene in the early 20th century – 1924, or maybe 1925, or maybe 1927. In Mexico. Or San Diego. Or maybe even in 1903 in Chicago. Urban myth’s a beautiful thing.

On a busy July 4th 1924 Caesar Cardini ran out of supplies at his restaurant and created the salad on the fly with what was in stock. No, no, a Cardini business partner actually created the first Caesar’s salad in 1927, but called it “Aviator’s Salad” because he served it to San Diego airmen. No, no, brother Alex invented it. No, no, an employee of the restaurant developed it in 1925 and the brothers stole it from him …

In any case, the Cardinis moved to Los Angeles, opened a gourmet food store and by 1948, there was so much market demand for the salad dressing that Caesar decided to launch a new business selling bottled dressing in partnership with his daughter Rosa.

Here on Cape Cod in a hot patch in late June, we find we don’t really care who invented it. We just bought a pre-made bottle of it and made a quick and easy salad-sandwich-supper.

Caesar Salad Roll Ups

Ingredients:
1 chicken breast
olive oil
sal de mer or other flavored salt
crispy crunchy romaine lettuce
bottled caesar dressing of your choice
croutons
parm or multi mix Italian cheese
flour tortillas

Steps:
1. Heat your grill – this is one time a gas grill is pretty darn handy.
2. Rinse and dry chicken
3. Rub chicken with a little olive oil, then sprinkle with sal de mer on both sides.
4. Grill until done
5. Chop up a handful of lovely romaine leaves
6. Chop chicken into bite size pieces
7. Mix chicken, lettuce, a handful of croutons, and dressing to taste
8. Spread into tortilla and sprinkle with a bit of cheese
9. Roll up and enjoy
